You may not be familiar with Yucca (which also goes by cassava and manioc), but I can guarantee that you have seen it at your local produce store. Yucca comes in different forms and can be used as a thickening agent or to improve the texture of gluten-free baked goods.  When it comes to purchasing Yucca, you should avoid the ones with dark streaks running through the bark. This indicates that it is past its prime.  It also has a short shelf life. It is recommended to use the Yucca within a few days of purchase. Fresh is always better. You should always buy extra too!
